There are lots of dishes but I firstly start with my fav dish...
1.Litti Chokha

All of you know that Dosa is a classic South Indian dish that consists of a thin, crispy crepe made from fermented rice and urad dal (black gram) batter. It is often served with a variety of chutneys and sambar.
3.Paneer Tikka
Is not only about paneer tikka most of people like lots of variety in paneer. Paneer are used in noodles, people make sabji of it, paneera tikka etc. and many more form. Now talking about paneer tikka Paneer tikka is a popular appetizer that features cubes of paneer (Indian cottage cheese) marinated in a spiced yogurt mixture and then grilled or baked. The marinade typically includes ingredients like turmeric, cumin, coriander, garam masala, and chili powder, giving the paneer a robust and smoky flavor. Often served with a side of mint chutney and lemon wedges, paneer tikka is a perfect introduction to Indian flavors and a favorite among both vegetarians and non-vegetarians alike.
4. Chana Masala
In childhood or present time I never say no to chana masala with pudi. Chana masala is a hearty and flavorful curry made from chickpeas (chana) cooked in a spicy, tangy tomato-based sauce. This North Indian classic features a blend of spices such as cumin, coriander, turmeric, and garam masala, which create a rich and complex flavor profile.
Often enjoyed with rice or various types of Indian bread like naan or roti, chana masala is a staple of Indian vegetarian cuisine and provides a satisfying and protein-rich meal.

5.Daal Baati
I love the taste of daal baati and butter milk is perfect match it. Daal baati is a traditional Rajasthani dish that embodies the rich and robust flavors of North Indian cuisine. It consists of two main components: daal, a spiced lentil curry, and baati, which are round, hard wheat flour rolls baked until golden brown. The baati are typically served with a generous dollop of ghee (clarified butter) and the daal is seasoned with a blend of spices like cumin, coriander, and turmeric. The combination of daal and baati provides a hearty and comforting meal, showcasing the simplicity and depth of traditional Rajasthani cooking.
